Fran’s Recipes: Goat’s cheese on a bed of honey and lemon carrots

How about another thing I love about Portugal. They actually eat goat meat and goats cheese is abundantly available. For this simple treasure you will need:

Grated carrot
Honey drizzle
Lemon juice
Goats cheese
Chives

It just couldn’t be simpler and more self-explanatory.

Mix the lemon juice and honey and use as dressing over the carrots. Place the fresh soft goats cheese on top and sprinkle with chives picked fresh from Fran’s organic veggie and herb garden.
