Balham Inspired Cake

Round 2 of the @TrinityStores Balham cake off came quicker than I expected. This time, I wanted to make sure I paid enough attention to the actual presentation of the cake, than just the cake. But the question is…. what is so “Balham” about Balham. The only thing I can think of is….

Nothing else but crickets came to mind, except “gate way to the south”. I really was not sure how I would present that though, so I stuck with the good old Balham Tube sign. I needed to get the right tools for this, and this is what I found at my local supermarket.

For the actual cake, nothing came into my imagination at all. So I went straight for a Betty Crocker style chocolate fudge cake and turned it into, well, what I was hoping would be a red velvet cake.

There is no point in sharing the cake recipe, you have good old Betty for that. I will however share what I thought would be a special touch to the regular cake: marscopone and cream cheese icing.

Marscopone and cream cheese icing

200g marscopone cheese
200g cream cheese (Philadelphia is great)
1 cup icing sugar

Throw ingredients into a mixing bowl and… MIX!!!!!!!!

I assembled my cake and headed to Trinity Stores for the moment of truth in the Balham Cake Off Round 2…. How will my master piece stack up?
