The easiest pancakes ever!
Note well: The thing about me is that anything remotely related to flour, cake or batter just screams “baking” to me. This is one thing I am not patient enough with, that’s what my lovely sister is for, hehe. End Note.
But this pancake recipe is as easy as pie (another thing you will not catch me making unless it is shepherd’s). You will need:
1 cup flour
1 cup milk
1 egg
1 tablespoon sugar
Whisk together and ladle pancake batter in a pan. These will not be big thin ones, they are a bit smaller, but thick and spongy.
Top with your favourite berries and a hint of, you guessed it! Rooibos Syrup (and please, skip the thyme in the syrup, that was more for the spareribs recipe).
Bish, bash, bosh!

February 14, 2012 at 5:20 pmThis looks so delicious. Me and my son have a gluten allergy and thus have to use those ‘horrid’ tasting gluten free products. I finally found a gluten free pancake mix that tasted as good as yours look in the photo above. Unfortunately, the store where I originally bought the mix doesn’t sell it anymore. So, I am looking at your photo and reminiscing about good pancakes in the morning and how it can start a day off right. ~ Ayanna Nahmias

I am not a dietitian, so I cannot say for sure if it will be gluten free, but I have always wondered what a “corn meal” pancake would be like. I may just try it.
